This Turkey Taco Soup Recipe is a large pot of comfort, with a lot of flavor, and our family devours it every time I make it. If you love ground beef, you can try this Ground Beef Vegetable Soup (so comforting and easy!)
I keep most of these ingredients in my pantry, which is why I call it Pantry Turkey Taco Soup (tomato sauce, diced tomatoes, corn, kidney beans, refried black beans, and chicken broth).
How to make the ground turkey
- In a large cooking/soup pot, heat the olive oil to medium heat; add the mirepoix (mix of onions, carrots, and celery), and cook on medium heat until soft.
- Add the ground turkey and cook together until turkey is cooked through.
- I like to take a paper towel and lay on top of the meat mixture to take away any grease.
How to make the soup
- Drain the kidney beans and corn; set aside.
- To the meat mixture, add tomato sauce, tomatoes, refried beans, taco seasoning and chicken broth.
- Add in the drained kidney beans and corn. Bring to a boil, cover and simmer about 10-15 minutes.
Taco soup toppings:
Serve with your favorite toppings, such as low fat sour cream, chopped red, onions, and chopped fresh cilantro.
- Sour cream (or Greek yogurt)
- Chopped onions: red or white
- Chopped green onion
- Fresh cilantro: leaves
- Tomatoes: diced
- Salsa
- More cheese: Mexican cheese or Cotija is the best.
- Tortilla chips
Tips and substitutions:
You can switch out the ground turkey for ground beef, or even add shredded chicken.
Serve with your favorite toppings- and let everyone make their own perfect bowl of taco soup!
A little warning, that if guests are coming for dinner, you might want to double up on the recipe!

Love that….I’m making a vegan enchilada casserole tonight for dinner. Trying to lighten things up and get rid of some unwanted pounds, to work on getting back into exercising. I just shared on Instagram how I want to do more reading. I enjoy fiction because, well, it doesn’t require much thought or focus, but I want to finish some of the books I’ve started, plus I should be getting a new one today (present over perfect)…lol. Right now I’m reading For the Love by Jen Hatmaker and Savor by Shauna Niequeist….great books so far.

Happy New Year Sandy!!! This soup looks good.
I am starting off the New year reading The Magnolia Story – Chip and Joanne Gaines. I have enjoyed watching their show. I think they portray the positive side of marriage. Then it’s also neat to learn about the different business’s they’ve created. So far it’s a fun read.
Most of your blog readers probably know this but I like to buy used books off amazon – you can get great deals. So I bought this book for $7.50 :)
