Make A Healthier Dessert

Since we follow a Nourishing Traditions diet, making healthier desserts is so important to me. I’ve cleaned up many of our favorites like these chocolate chip cookies. This strawberry cobbler is no different. Now, if you’re not into desserts made with the healthier ingredients, use whatever works for your family. No judgement here! If you are trying to move to healthier, cleaner ingredients but worried how your family will react, go slowly. If a recipe calls for 2 cups of sugar, start with 1/4 of a clean sweetener and 3/4 regular sugar and adjust slowly each time you make a dessert. The family will get used to it much easier this way! My villagers are used to me using Rapadura, coconut sugar and honey now but it took time to get there.

This strawberry cobbler has an almost caramel like glaze when I make it with coconut sugar. It’s ridiculously good!

HOW TO MAKE THIS HOMEMADE STRAWBERRY COBBLER

This recipe is really easy to make! It only takes a few ingredients and you don’t even have to slice the strawberries. You will need:

  • 1 1/2 cups einkorn flour (or whatever flour you use)
  • 1/2 cup + 1.5 Tablespoon sugar
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 Tablespoon arrowroot powder (or cornstarch)
  • 3 + 2 Tablespoons butter
  • 1/2 cup water
  • 1.5 pounds strawberries, hulled
  • 3/4 cup + a splash more of heavy cream (I used full fat, raw milk)

Pre-heat oven to 400

1) Butter your 2 1/2 quart baking dish. I used leftover bacon grease for mine, YUM! Hull your strawberries and fill the bottom of the dish. I packed mine in there pretty tight.

2)1/2 cup of sugar, arrowroot powder and water into a medium pot. Cook on medium heat until it starts to thicken and then pull from heat and add 2 tablespoons butter.

3) Add sugar mixture to strawberries

4) Sift flour, 1 1/2 Tablespoons sugar, baking powder and salt in medium bowl. Cut in 3 tablespoons butter and add milk. Mixture will be soft and slightly thin. Cover strawberries.

5) Bake for 25 minutes. Crust will have browned a bit and mixture will be bubbly. Let cool at least 10 minutes before serving. Top with ice cream or whipped cream.
