The enchirito is Taco Bell's version of an enchilada consisting of a tortilla filled with refried beans, ground beef, and onions.

It is then topped with red enchilada sauce, melted cheddar cheese, and black olives.

Make it at home using this Taco Bell Copycat recipe.

The Taco Bell Enchirito was one of my husband's favorite fast food item. However, Taco Bell removed it from their menu.

I created this copycat recipe so that he can enjoy them at home. It is just like Taco Bell's, only a little cheesier!

What is the difference between an enchilada and an enchirito?

An enchirito is a combination of a burrito and an enchilada because it is stuffed with both refried beans and ground beef, then topped with enchilada sauce and melted cheese.

An enchilada does not have refried beans in the filling.

Ingredients

You will need the following ingredients to make the Taco Bell copycat enchirito.

  • cheddar cheese- Fresh shredded cheddar is best. If you are trying to make the Taco Bell copycat version, you will want to finely grate the cheese.
  • white onion
  • ground beef-Taco bell uses ground beef. However, you can substitute with ground chicken, ground turkey, or ground pork.
  • red enchilada sauce- I highly recommend using Old El Paso red enchilada sauce. I have tried other brands and it did not come out as good.
  • refried beans
  • black olives- Taco Bell tops the enchirito with 3 sliced black olives. However, if you do not like black olives, you can omit them.
  • taco seasoning mix- Taco Bell now sells their taco seasoning at the grocery store. You can use their mix or purchase your favorite brand. Try this homemade mix if you want to make your own.
  • medium sized flour tortillas-Do not substitute with corn tortillas for this recipe.

Steps

Follow these simple steps to make enchirito.

  1. Place your flour tortillas on a plate and cover with a damp paper towel. Microwave for 30 seconds. Remove from the microwave and set aside. (This will make your tortillas easy to roll.)
  2. Cook ground beef until done. Mix taco seasoning mix in the ground beef.
  3. Take one flour tortilla and spread about 2 tablespoons of refried beans down the middle. Top beans with a ¼ cup of ground beef. Top beef with diced onions. Roll tortilla. Repeat until all tortillas are filled.
  4. Place rolled tortillas seam down on lightly greased 9x13 baking dish.
  5. Cover tortillas with red enchilada sauce.
  6. Finely shred cheddar cheese.
  7. Top enchiritos with cheese.
  8. Bake in the oven at 350 degrees for 15 minutes.
  9. Allow your enchiritos to rest for 5 minutes. Top with sliced black olives and serve.

Note

Note: Taco Bell microwaved each enchirito individually. If you are making individual enchiritos, you can microwave it for 2 minutes. Otherwise, baking the enchiritos at one time is the easiest when serving multiple enchiritos.

Tip

Tip: You can use low carb tortillas for less calories and carbs. They will still turn out delicious.

  • ¼ cup black olives sliced

  • Bake in the oven at 350 degrees for 15 minutes.
